Most of the time, I boil the eggs on the eve and it takes me less than 10 minutes in the morning to prepare my lunch for work ^_^
3 boiled eggs
2 tbsp mayonnaise
One third cup of chopped green onions
Half tsp garlic powder
Quarter tsp cayenne pepper flakes
Salt and pepper
- Peel the eggs and crush roughly with a fork
- Add mayonnaise, garlic, cayenne, green onions and 2 pinches of grounded pepper. Mix with the fork.
- Taste the mixture and add salt only if you required. I don’t put much because the bread slices I use are already salted.
- Use this egg-mayo mixture on toasts, to make sandwiches or crostini!
