Easy Zucchini Flan


500 g zucchini
100 g grated parmesan cheese
4 beaten eggs
2 tbsp maizena
12 cl cooking cream
1 cup liquid milk


  1. Preheat oven at 210 degrees.
  2. Wash zucchini and chop in 1-cm cubes. Steam them for not more than 10 minutes, until they are just soft enough to insert a fork easily. Put the cubes to drain the excess water out, keep aside. (You can peel the zucchini too, but I haven’t tried it yet)
  3. Hand-whisk the maizena with the milk before adding the cooking cream, beaten eggs and grated cheese. Salt and pepper the mixture before adding the drained zucchini.
  4. Grease oven tart-bowl, pour the mixture in and bake for 30 minutes. The top shouldn’t be burnt.
